Since it’s about 300 years of establishment, NINBEN has provided infinite possibilities of “Katsuobushi” (dried bonito) and “Dashi” (“soup stock” in every eating scenario as a Katsuobushi-specialized store. As the third project for the Edo Tokyo Kirari Project Model Business Implementation, an event will be organized from November 1 (Wed.) to November 30 (Thur.) 2023 to allow many people the opportunity to experience dishes that compliments the flavors of dried bonito and dashi.
During the event, a total of 19 menus will be available with the cooperation of 17 restaurants including well-established places in Nihonbashi.

These restaurants include places that provide Edo cuisine, soba, unagi, tempura, sushi, sukiyaki, yakitori (skewered grilled chicken), Japanese cuisine, Western cuisine and katsuobushi-specialized stores. All of them represent the modern Tokyo’s taste, filled with uniqueness.
These wonderful restaurants have prepared menus for this event that are very much Tokyo which the actual great flavors of dried bonito and dashi can be enjoyed.
Be sure to go around these restaurants to immerse yourself in the rich flavor and fragrance of dried bonito.

Since opening in COREDO Muromachi 1 in 2010, Nihonbashi Dashi Bar Main Store has been a dashi community in order to spread and allow people to enjoy dashi as well as taste it. It is NINBEN’s first eating business.
The “dried bonito dashi” or “katsuobushi dashi” garnered popularity with the authentic dashi flavor. This dashi-specialized store is also loved by many customers for providing a place where they can find the authentic dashi deliciousness. Menus including “Katsuobushi dashi”, the monthly limited menu of “Dashi soup” and “Katsubushi-meshi” (Dried bonito flakes on rice) all use dried bonito flakes that NINBEN has been extremely dedicated to.
