This summer has seen an early end to the rainy season nationwide, and a string of sweltering hot days – and now, a happy notice fromToshimaya Hontenabout the release of a new sake. Toshimaya Honten – a member of the Edo Tokyo Kirari Project and the oldest brewery in Tokyo, having been founded in 1596 – has begun its sale of “Kinkon Juemon Jikagumi Nama,” their 2022 limited-edition seasonal summer sake. Their summer sake, which is very well-received every year, is made by extracting the Juemon brand of Toshimaya Honten junmai-sake (sake brewed from highly polished rice and fermented at a low temperature), which is popular for its crisp flavor, then bottling it immediately afterwards. This seals in the carbon dioxide produced during the fermentation process, giving the sake a slight effervescence. The refreshing effervescence and smooth flavor of the sake has made it a good choice for those who are inexperienced with sake.

The “Kinkon Juemon Jikagumi Nama” can be purchased in the Toshimaya Honten online store. Over the summer, however, it is also available for sampling in-store at Toshimaya Sake Shop, a standing izakaya run by Toshimaya Honten themselves. The Toshimaya Sake Shop offers various appetizers/nibbles made from fresh, seasonal ingredients, as well as their specialty, tofu dengaku (grilled tofu dressed with sweet miso paste), made with tofu and miso in the Tokyo style.
