FOODFounded in 1782, Shinbashi Tamakiya has long dedicated itself to the rich culinary culture of Edo (Tokyo) with local delicacies such as tsukudani (small fry, shellfish, and seaweed simmered in soy sauce and sugar) and zazen mame (sweetened black beans).
This summer, from May to the end of July, savor the unique flavors of our limited-edition Kinzanji Miso, made with a nutritious combination of eggplant and barley.
Kinzanji Miso, a traditional dish with roots in Chiba, Wakayama, Aichi, and Shizuoka Prefectures, is said to have been brought to Japan by the Buddhist monk Kobo Daishi, also known as Kukai, who travelled as an envoy to Tang Dynasty China, studying at temples such as Kinzanji, and spread quickly upon his return.
