FOOD Toshimaya Honten, founded in Keicho(1596) and the oldest sake shop in Tokyo, has announced the completion of a Shinshu (new sake)to herald the arrival of winter.
From spring sake to summer sake, hiyaoroshi in autumn, and new sake in winter, the beverage allows you to taste the flavors of each of the four seasons.
In November, Toshimaya Honten began selling two types of sake: “Kinkon Shiboritate Unfiltered Nama Genshu,” the first pressing of the year, and “Kinkon Junmai Activated Nagorizake,” a nigorizake characterized by its refreshing taste, which comes from using live yeast, and fizzy sensation. Both have a young and fresh flavor and can be enjoyed as a perfect pairing with meals made using seasonal ingredients.
A cedar ball (sugidama or sakabayashi) has also appeared at the directly managed Toshimaya Sake Shop in Kanda, Chiyoda-ku, Tokyo. With its bright green color and cute round shape, the cedar ball welcomes visitors to the store.
Sugidama are icons that are displayed at the eaves of sake breweries and stores to announce the completion of a new sake.
Their history is ancient and is said to have been described in Kojiki and Nihonshoki (Chronicles of Japan). New cedar balls are green in color, but gradually turn brown over time.
If the cedar ball is green, the brewery’s sake is new. Once the ball is light brown, the sake is a spring sake, and once it is dark brown, the sake is hiyaoroshi… In this way, it is said that the color of the cedar ball is proportional to the maturity of the brewery’s sake.
